Shiitake and Oyster Omelette
We added dried Shiitake to the famous Taiwanese food stall dish “蚵仔煎, Ô-á-tsian” (Oyster omelet), and it was supremely delicious! The savory combination of Oyster and Shiitake are a perfect match!

(serves 2)
- Dried shiitake mushrooms
- 2 pieces(5 grams)
- Oysters
- 150 grams
- Eggs
- 2
- Garlic (minced)
- 1 clove
- Salt and pepper
- as needed
- Rice flour
- as needed
- Cooking oil
- as needed
- Oyster Sauce
- 1 tablespoon
- Sesame oil
- as needed (small amount)

Rinse shiitake mushrooms, soak in water to rehydrate, and slice.

Season oysters with salt and pepper and coat with flour.

Add oil to frying pan and saute garlic over low heat until fragrant. Increase heat to medium, then fry oysters and shiitake mushrooms (lightly squeeze the mushrooms to remove excess water).

Add beaten eggs to 3), and then add oyster sauce once the eggs are half-cooked, and mix briefly. Add aroma with sesame oil.
