It is well known that the sweetest tasting Shiitake are grown on Japanese Sweet Sap Oak (“Kunugi” in Japanese).
The optimal natural moisture provided by the fog and minimal rain, with the low temperatures create a slow-growing environment where a very deep flavored with a firm textured Shiitake are produced.
No pesticides or chemicals are used.
Our Shiitake are dried using deep infrared which enriches the Vitamin D content and reduces the total moisture to 9%
