Shiitake Gapao Rice (Thai Fried Rice)

Thai fried minced chicken and basil with rice is called “Gapao Rice” in Japan. Japanese people like this Gapao rice very much. Asian cuisine will be more delicious with Japanese Forest-grown shiitake mushrooms. Slowly fry garlic, red chili pepper, and cilantro stem for a delightful aroma.

Chicken thighs
300 grams
Dried shiitake mushrooms
6 pieces
Basil leaves
4 leaves (1.6 grams)
Small green pepper
2 (80 grams)
Sweet red pepper
1 (150 grams)
Onion
1/2 (100 grams)
Garlic (minced)
2 cloves (10 grams)
Red chili peppers (sliced thinly)

Rinse dried shiitake mushrooms and soak in water to rehydrate.

Cut chicken, softened shiitake mushrooms, green peppers, and red peppers into 1 cm cubes and onions into 1 cm wedges.

Mince the garlic cloves, remove the seeds from the red chili peppers and cut into small rings.

Mince about 1 tablespoon of cilantro

Add vegetable oil, garlic, red chili pepper, and cilantro stems to frying pan and cook slowly over low heat , adding chicken and shiitake mushrooms once fragrant.

Once the chicken is cooked through, add sake and stir around the frying pan, and then add green peppers, red peppers, and onion, and flavor with nam pla fish sauce, oyster sauce, and sugar.

Tear and add basil leaves, salt, and pepper to taste.

Fill bowl with rice and top with a fried egg. Garnish with cilantro and lemon as desired.
